- Looking for a Southern Maryland stuffed ham? Today’s the last day to get your order in for Easter (if you celebrate) or the weekend! Local butcher, The Ugly Pig, is offering legs of lamb, ham (regular or Maryland stuffed), potato gratin, salad dressing, and lemon asparagus. If you’re like me (not from Maryland) and not sure what a Southern Maryland stuffed ham is – it’s a ham stuffed with kale, other veggies, and spices. It’s a micro-regional dish that generations of St. Mary’s County families have enjoyed for many years. According to WAMU 88.5 American University Radio, historians trace the dish’s roots to the county’s Black residents, who were enslaved on the region’s tobacco plantations.
