For example, if your flour is densely settled in your canister, the scooping method is likely to get you too much flour by weight, which can make your cookies dry and crumbly. Weighing these ingredients is critical to achieving consistency in flavor and texture. I can guarantee you that any good recipe you find online was tested by weight, not volume. Basic digital kitchen scales are super cheap, so there are no excuses!
Ok. Now that I’ve scolded you about your measuring habits, let’s get to the fun stuff!
- Brown your butter. Browning your butter is such an easy way to add a delicious, rich caramel flavor to your cookies. This technique works especially well with cookies that benefit from intense butter flavor and a chewy texture, such as Snickerdoodles or Ginger Molasses Chews. If you’re not familiar with browning butter, there are a ton of easy tutorials online!
- Chill your dough before baking. Chilling the dough for at least an hour before baking allows the flavors to meld, and prevents excessive spread in the oven. Honestly, the longer you chill, the better.
- Line your baking sheet with parchment paper or a silicone baking mat. This promotes even browning, prevents sticking, and makes cleanup a breeze!
